The Bleach anime wasn't cancelled. TV ratings and DVD sales for it were still high. They just decided to stop it since they adapted up to the Fullbring arc and Thousand Year Blood War had literally just started. There were always planning on waiting to adapt it later, which is exactly what happened.

If any of that was remotely true, they would have done that right as Bleach ended not years later.

They were banking on Toei since Toei does both Dragon Ball and One Piece. Toei just gave Toriko to their B-team and did a shitty job.

There is none, nobody really knows what influences Jump editorial decisions but it's probably a mix of TOC ratings, volume sales, and the gut instincts of the editors.
Bleach did terrible in TOC ratings for years yet still sold very well in volume sales and was thus kept around.
