the base matabolic rate for a female is around 2500kcal/day, just over 100kcal/hr. that's just sitting around reading a book. exercise on an elliptical trainer burns about 350kcal/hour, simple walking about 300kcal/hr, swimming laps burns about 400 kcal/hr. while these are substantisl increases over the base burn rate, you cant keep them up long enough to make much of a difference, not if you have an actual life. you're juch better off lowering the thermostat at home, increasing her BMR that way by forcing her body to burn more energy to keep warm - because that effect is easy to keep up for many hours a day, and doesnt interfere with life.

Alright. I don't think I explained the crux of my issue with all this well enough. None of this is controlled. She's not following a dietary plan of any sort. I said I didn't even consider this a diet because she just doesn't eat until her legs go numb or it hurts, and then she eats some small snack item (ie, chocolate, toppings off a pizza, or some other item that doesn't even constitute food.) It's making her sleepy all the time, and it's making her irritable, and it's not as if she just started the diet. This type of thing isn't new either. She started refusing to drink water a while back before we started going out and were friends, and I spent time convincing her to cut that shit. She has these weird self destructive tendencies and it scares me as other than that she's honestly the best girl I've ever gone out with. I can't be in a situation where the potential mother of my kids acts like this though.

You need to strike a balance here with your understanding of her diet and what's working for her or not. First off, I have a gut feeling you're one of those people who gets all worried about "muh nutrients" and doesn't understand how resilient the body really is. I know lots of overweight people who are like "you need to eat these food items or you're gonna DIE" and therefore are only ever able to consume a deficit of like 100-200 calories at best. If your girl wants to lose weight, that ain't gonna cut it, just like "exercise" isn't gonna be enough for an overweight person to lose lbs.
Frankly, it sounds like you're not really helping her. You mention pizza toppings... who exactly is ordering the pizzas? Is it you? She obviously shouldn't be eating chocolate on "keto" either. If you want her to eat healthier things and let her meet her diet goals, help her out by bringing around foods that she can actually eat on a low calorie level instead of wafting a pizza under her nose and wondering what's wrong. Get her a multivitamin and some other supplements as a gift if worried about her nutrients.
I'm on a diet myself, down nearly 15 lbs in two weeks, eating 1,000 calories a day, but I get my calories from lean meats, leafy greens, raw veggies as a snack, and take a regimen of vitamins. I also still exercise. But it's all about putting the right foods in front of you.

Keto and fasting are actually two of the three methods I've used to lose weight in the past, and it's not unhealthy at all. Fasting in moderation has shown to be good for your body in some cases, and it's an excellent method of losing weight if you control it properly and drink lots of water. Honestly both keto and fasting are perfectly healthy, and I would only be concerned if she was fasting for more than 48 hours of if she was eating under 400-600 calories a day when she does eat. If she is overweight to the point where she isn't at a healthy weight, it's more important for you to encourage HEALTHY dieting and weight-loss activities, rather than discouraging her. Discouraging her when she's making progress and finding something that works for her will only damage your relationship and make her feel more insecure.
